As promised, the food dish of the month that you can eat while you game is going to be my special Alfredo Sauce which can be used with any kind of pasta that you want. I prefer spaghetti, but you may prefer something different and that’s totally ok. This is a really simple sauce to make and takes about forty-five minutes max to make and it’s super simple to eat while you game.
So let’s get started. Here’s what you’re going to need:
• 2 Small Bell Peppers
• 1 Handful of Garlic Cloves (I like a lot of garlic so I use more then that, but it’s really up to you.)
• ½ Bag of Broccoli
• Mrs. Dash Hot and Spicy Seasoning (totally optional if you don’t like spicy food.)
• Olive Oil
• Grated Parmesan Cheese
• ¼ Cup Butter
• ½ Cup Cream Cheese
• ¾ Cup Coconut Milk (you can use regular milk if you want, but the sauce will not stay overnight when using milk. The whole thing separates and gets really gross, so it’s your call but I prefer the Coconut Milk.)
Now that you have all of your ingredients, let’s get started.
First you’re going to want to finely chop up your garlic and add it to your frying pan with enough of the olive oil so that it’s giving the pan a nice coating of oil. Turn your burner on and start frying up the garlic.
While you’re doing this go ahead and finely chop the 2 small bell peppers that you have. Once those are chopped, go ahead and toss them in the frying pan with the garlic. Once you have the peppers and garlic in the pan go ahead and toss the broccoli in there as well.
You’re going to want to let all of this cook for about 10-15 minutes until the garlic and peppers are roasted and the broccoli has started to soften just a bit.
Now that your vegetables are cooked, you’re going to want to start adding the contents of the sauce into your frying pan. First you’re going to want to add the butter into the frying pan followed by the coconut milk, and then finally the cream cheese.
Now that you have everything cooking in your frying pan it’s time to season. Go ahead and add in the Mrs. Dash hot and spicy seasoning as well as your parsley, basil, and oregano. When it comes to seasoning, I never really measure it but instead go by taste so this part is going to be up to you on how much you want to add or not add. Mix everything in and then add your grated parmesan cheese. With this you can also add as much or as little as you want. Just as a side note, the more you add the thicker your sauce will be.
Let everything cook together for the next 30 minutes on medium to low heat while stirring the sauce occasionally.
Once your sauce is done go ahead and dump the drained pasta of your choice into the sauce. I always put in just a little bit of the pasta water as well, just to loosen the sauce a little and add some extra flavor. I also like to have some garlic bread on the side to scoop up any extra sauce there may be.
Now grab yourself a plate and get ready to play the game of your choice. My choice of game? Dragon Age: Inquisition. There’s enough small simple things to do that I can still enjoy the game while enjoying my food at the same time.
